As of the 2000 United States Census,[6] there were 1,135 people, 484 households, and 336 families residing in the village. The population density was 1,952.5 people per square mile (755.6/km2). There were 519 housing units at an average density of 892.8 per square mile (345.5/km2). The racial makeup of the village was 98.77% White, 0.18% African American, 0.18% Native American, 0.18% Asian, and 0.70% from two or more races. Hispanic or Latino of any race were 0.62% of the population.

There were 484 households, out of which 29.3% had children under the age of 18 living with them, 53.5% were married couples living together, 12.0% had a female householder with no husband present, and 30.4% were non-families. 27.9% of all households were made up of individuals, and 12.4% had someone living alone who was 65 years of age or older. The average household size was 2.35 and the average family size was 2.80.

In the village, the population was spread out, with 23.7% under the age of 18, 8.5% from 18 to 24, 26.4% from 25 to 44, 25.0% from 45 to 64, and 16.4% who were 65 years of age or older. The median age was 39 years. For every 100 females, there were 89.8 males. For every 100 females age 18 and over, there were 85.8 males.

The median income for a household in the village was $37,788, and the median income for a family was $42,667. Males had a median income of $31,065 versus $24,286 for females. The per capita income for the village was $18,243. About 5.6% of families and 8.5% of the population were below the poverty line, including 11.7% of those under age 18 and 9.4% of those age 65 or over.

Labor Day Festivities

Since 1945 Edinburg boasts an annual Labor Day Picnic and Parade which emphasizes the rural and agricultural history of the area. Activities including demolition derbies, tractor pulls, chili cook-offs, live music, games, rides, tournaments and a Labor Day Parade.
