Varieties

Persian buns are a variety of Pershing popular in the US States of Wisconsin and Maine. They come in a variety of flavors, but those covered with chocolate frosting seem to be the most popular.[1][2] The fried doughnut is, essentially, a Pershing covered with frosting.[3] In some places Persian buns are known simply as a Pershing doughnut despite the addition of the icing.[4]
