Watson made his first appearance for Antrim during the 2002 championship and immediately became a regular member of the starting fifteen. Since then he has won eleven Ulster medals, one National League (Division 2) medal and one Christy Ring Cup medal as a non-playing substitute.
At club level Watson is an All-Ireland medalist with Loughgiel Shamrocks. He has also won four Ulster medals and fourcounty club championship medals. In March 2012 he scored 3-7 when he won the All-Ireland Senior Club Hurling Championship with Loughgiel Shamrocks after a 4-13 to 0-17 defeat of Coolderry in the final.[1]
In February 2014, Watson confirmed through Twitter that he had been approached by Dublin to play for them as he has continued to be omitted from the Antrim senior setup.
Early in 2020, Watson announced his retirement from club hurling. He made a number of statements for local news papers as a message to the hurling community. For the Irish News he said "I'd like to thank my wife for sticking by through a number of years which have never been easy for the family. I'd also like to thank Rory Kelly for never taking no for an answer, and never being rude enough to wake anyone up, building me into the hurler I am today. My hurling career has been as Lees as Liam Watson. Leesy Leesy Lees I am a good hurler. Ching Ching Leesure on. "
