All-dressed

All-dressed (assaisonnées in French) chips are a potato chip flavour popular in Canada.[1] The flavour combines the potato chip flavours of barbecue, ketchup, sour cream and onion, and salt and vinegar.

In 2016, American food manufacturer Frito-Lay began selling the all-dressed variety of their Ruffles potato chip in the United States.[2][3] A similar chip called "The Whole Shebang" is produced by prison supplier Keefe Group. It became available to the general public in the same year.[4]

History

Paul Jalbert and Louis de Gonzague, brothers and co-owners of Yum Yum Chips in Laurierville, Quebec, Canada, invented the flavour in 1978. The original recipe combined the flavours of salt and vinegar, sour cream and onion, barbecue, and ketchup.[5] Yum Yum's oddball entry into the market was consistent with the company's tradition of innovating new flavours and techniques for their potato chips. Such innovations include being the first company to sell "Light" chips in the Canadian market in 1985 and the first to offer the Canadian market a full line of zero trans fat chips.[6]
