Al Rosas

Al Rosas an American chef and organic farmer.

Biography

Rosas was born in 1962 or 1963 and is of Colombian heritage.[1] He first encountered his wife, Erin, in 1985 in Wisconsin which they both were from.[1] She was a medical student and waitress and he was a food and beverage director at the same place at which she was waitressing.[1][2] Rosas worked at a Milwaukee company before becoming with his wife he owners of Rosas Farms, a 100-acre farm owned by Erin's ancestors, in 1989.[1][3] The farm used to be for raising thoroughbred horses.[1] The Rosases converted it into a completely organic farm that raised livestock and was a place for tourists to visit.[1] In 1993, they left the farm when Rosas became a food and beverage director who had to do substantial traveling, but returned to it in 1996.[1] In 2007, the farm began selling its products through Sysco.[4] Al and Erin Rosas became the first people to be accredited as organic farmers.[4] At his house, he taught cooking lessons.[5] Rosas received the Cordon D'Or "culinary entrepreneur of the year" award in 2008.[3] In 2008, Rosas published a cookbook of organic recipes, titled The Organic Chef.[6] He became the co-owner and chef of the restaurant Cuvee Wine & Bistro which opened in 2009 and exited the business after having disagreements with the other owners.[5][7]

The Rosases homeschooled their two children, Michael and Lola.[2] Rosas is a Arthur Murray teacher and a martial arts contestant.[3] Al and Erin Rosas divorced.[5] Rosas started Organic Chef Foods, which sells organic foods in Ocala, Florida.[5]
