My job gave out 3 old 10Zig 56xx thin clients running Windows XP. I was wondering if anyone knew how to overwrite them with Ubuntu 14.04?

Is it possible to replace the embedded Windows XP on a 10Zig 56xx thin client?

Yeah; it's a think client; looking at what they were being originally used for I thought of it more as a mini home and office server. – Morgan Green – 2015-09-16T01:38:33.163
Okay, well I am not familiar with that model—or any of the thin clients out there—but I did find this tutorial on how to do it with an Igel thin client. Not 100% sure all of the steps—or any—would be applicable for you, but I believe it’s worth looking at.
