My Epson WorkForce Pro WF 3720 recently stopped allowing me to print in black ink only. It wants me to buy color cartridges that I do not need. Tried disabling the Epson Status Monitor 3 in Windowsn to see if that would work, but that did not help.
It seems that some earlier related posts on this topic are no longer applicable as apparently Epson has changed things to make workarounds more difficult.
Any ideas?

You may want to reinstall the driver. In Devices and Printers, delete the printer and the remove the driver from Print Server Properties (assuming Windows...) – hdhondt – 2019-04-03T22:36:41.833
