What do any of you recommend for creating PDF files? I am aiming for something free if possible. Any suggestions?
Any help greatly appreciated

If you don't care about menu creation you can simply use the open source programme ps2pdf.
Just print your text into a file and then create a pdf from the ps-file.
Simple.

Alternatively just illegally download a copy of something like Adobe Acrobat Professional from Kazaa. Its a fairly bg file though so broadband would help but it can be done on a 56k modem.

Cool. I have broadband so that is good. Thanks for the suggestions. :D
Edit: I have found a program that just "prints" whatever document. You can type a document with text and graphics then goto print and select the specific printer and it will ask for the pdf to become created. The only downside is a little popup sponsor ad. Not bad though.
You can get the program here (http://www.pdf995.com/download.html).
