    • Slide the boot off of the throttle cable end. Remove the cover plate screw, and remove the cover plate by lifting or gently prying at the arrow

    • pull out on the sheath to remove it from the housing. Lift up on the cable to release the ball from the groove. Remove the boot from the old cable to be reinstalled on the new cable.

    • Use a 1/2" wrench or socket to remove the nut from the clamp. slide the cable through the guide in the direction indicated. open the clamp and remove from the old cable to be installed on the new cable.

Conclusion

To reassemble your device, follow these instructions in reverse order. Place the boot on the new cable after putting the cable through the guide sleeve. Re-install the clamp in the middle of the cable last, once you have both ends secured.

what’s the guard piece that holds the throttle cable and next to the carburetor called?

I just called it the Throttle Plate. The Honda GXV160 parts page refers to the whole mess as the “primary control assembly”, and the cover over the outside as the “control protector”.
