Deeds: Quick Draw needs rework
The text states the Gunslinger can take a turn at the end of the 'surprise round', but there is no surprise round in 5e D&D. Surprise is almost a 'condition' that affects any surprised creature until the end of their first turn in combat. A surprised creature cannot take actions or reactions until the end of their first turn, after which they are no longer surprised.
So the text might say something like "you cannot be surprised when under the effect of Quick Draw", or "you may take an action at the end of the first round of combat" but the text says you need to make a reaction to perform Quick Draw. Since there is no trigger specified and you cannot take reactions until the end of your turn at which point you are no longer surprised, it makes this whole idea redundant and contradictory.
Instead, Quick Draw could be an ability (spend an action cocking your gun and stretching your trigger finger) which grants you +2 to initiative and immunity to being surprised for something like an hour, similar to the Alert feat. Though this might be a bit OP considering it only costs 1 Grit which is easy to regain (subject to play testing I guess...)
Balance
I've fixed everything I found, balanced the guns with the values found in the DMG(p.268), made deeds a selection, and tweaked half a dozen other small things, is there anything i missed?
I also would like to point out that the guns are actually a fair bit weaker then in the DMG with the exception of the shot guns, since they don't have burst fire like in the DMG and have incredibly short range, and limited ammo, compared to the other firearms I've made them do 3d4 and 3d6 damage to differentiate them.
finally, I feel the need to point out that this class is clearly intended for a setting where firearms are much more common, like a western, or a stream punk setting. the type of setting that would allow most classes varying amounts of access to firearms. --Xahn (talk) 18:50, 15 July 2018 (MDT)

Can you stack ammunition types? For example, can I have Hardened + Hollow Point rounds?
Does Hammer Shot and Critical Blow stack?
If an attack bypasses resistance with Hollow Point rounds, why is it still subtracted? Wouldn’t the magic kinda negate that?
Do you regain 3 grit points before or after the damage is rolled for a critical hit? How would this affect the Critical Blow feature?
Why does the Peacekeeper Archetype gain two bonus proficiencies while the others only offer a choice? Could add some neat little tools or something for the other ones. (This one’s a bit nitpicky, but the Peacekeeper archetype is already pretty flashy.)
What does proficiency with manacles mean exactly? Do I just smack people with them? I can extrapolate the intended use, but it’s still fairly vague.
Criminal Tongue seems kinda meh considering Rogues learn it at 1st level. Additionally, Criminal Eye seems like it’d be more fitting for a lower level. Appraising objects is cool and all, but ultimately not really worth 11 levels. (At least to me.)
Forever on the Run grants a 50% sale price and a 10% discount --as does some of the crafting in this class description-- but traditionally D&D doesn’t use percentages in rules. Additionally, features that deal with haggling and selling are often weird as prices are not set in stone per se. A merchant could still upcharge the outlaw 10% simply because they’re greedy, trying to run a business, or they don’t like outlaws. There are ways to easily circumvent the feature. The bonus to stealth and the like is rather nice though.
I feel as if Trained Eyes should grant either advantage or expertise, but not both because perception checks are usually pretty important, but this ability makes them a tad trivial.
Does the Perfect Shot torso section become 17-20 even if you only score criticals on a 19-20?
Does Run and Gun stack with Fireback?
